Would you put a cheeseburger in your soup?

It’s sweater and fuzzy sock season, rapidly moving toward the time for winter coats. One of the best ways for tackling the impending chill is to warm the insides with some hearty soup.
I’ll say right off the bat that hearing “Cheeseburger Soup” did not make my mouth water. In fact, it turned my stomach. For fellow doubters like myself, it’s not what you think! Actually, this recipe reminds me of a creamy potato soup with ground beef that won over even the picky eater in my house.
One of the nice features is that it’s not something that needs to stew all day and has a rather quick turnaround for being such a flavorful soup. As with many things, the preparation of the ingredients with chopping veggies, etc. is what takes the longest and could be done ahead of time. There are enough servings to feed a small family or house of roommates for a few days and keeps well in the fridge for a few days.
I’m a converted doubter after giving this a try! I’d definitely recommend this to anyone who wants a new spin on a cheesy potato soup. This will be a great addition to the winter recipe book!
Ingredients
½ pound ground beef
¾ cup chopped onion
¾ cup shredded carrots
¾ cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
4 tablespoons butter
3 cups chicken broth
4 cups cubed potatoes
¼ cup all-purpose flour
2 cups cubed Cheddar cheese
1 ½ cups milk
¼ cup sour cream
Instructions
Step 1: In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef, until beef is brown.
Step 2: Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
Step 3: Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
Step 4: Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.
